An opportunity to learn how to make fine cakes and patisserie to accompany finger sandwiches to produce an Afternoon Tea selection fit for Royalty.
During this course you will make:
Victoria Sandwich Mini Loaf Cakes –
Learn to make the classic Victoria sandwich in a miniature version. Mixed from scratch, you will also precisely weigh the batter so that all your loaf cakes look the same.
Once baked, you will cut, fill and finish your mini cakes.
Fluffy Scones –
You will weigh and mix the dough by hand, adding juicy sultanas if preferred.
You will pin out the dough, cut and glaze before baking.
Finally you will cut and fill your scones with strawberry jam and lashings of delicious clotted cream.
Fruit Tartlets –
Learn to make a rich sweet pastry to use for lining your tart cases.
You will also learn how to make Creme Patisserie which will be used to fill your tart cases once baked.
Finally you will decorate with a selection of fresh fruits and glaze.
Finger Sandwiches –
You will learn how to make perfectly cut finger sandwiches with soft fillings, to be used on your tiered stand to complete your afternoon tea.
After making, baking, filling and decorating your masterpieces we will sit down as a group and dine like Kings and Queens. Loose leaf tea will be provided to complete the lunch.
During the course, you’ll make a larger quantity than you will require for your sit down afternoon tea here at Cinnamon Square. The extras you make will be yours to take home to indulge your family and friends.
After you have baked and indulged, you’ll be all set to host your very own Afternoon Tea for friends and family.
