Description

The course objective is to learn how to make a traditional English tin and wholemeal bread by hand using minimal equipment.  You will also learn about the science behind the ingredients, recipe and method used.  This will help you when you then try to make more bread at home.  You will also make an oven bottom bloomer and plaited loaf using a prefermented dough and you will also learn about sourdough bread and take one home to eat.

The course is hosted by Paul Barker who has 30 years of baking experience and a baking industry award for his training skills, so bring your questions and share your experiences.

This is one of our most popular courses and many who have taken this return at a later date for the Sourdough class, which focuses on prefermented and sourdough breads.

Coffee or tea is served on arrival and the price includes a buffet style lunch/meal plus wine is included.  You will leave the course with bags of your freshly baked bread!

    Just a brief note to say how much I enjoyed the breadmaking class last night. Paul was an excellent teacher, the course was very well thought out, cleverly constructed and well paced, and I felt Paul packed every minute of the course with useful practical experience. I also appreciated his knowledge and understanding of baking science as well as the processes, and it was a pleasure to be able to ask him questions and learn from him as we worked on our breads. He was very generous with his patience, and seemed to be enjoying he education process as much as we were.

    The meal mid-evening was also very good and very much appreciated, and I understand Paul’s daughter was working away in the background to look after us so thank you to her too.

    Overall, one of the best courses I’ve attended (on any subject!) and thank you Paul for making it such an enjoyable as well as educational experience.

    A really excellent day. Paul took all of us through from different starting levels to the same finishing level. He was able to demystify the process and to answer all questions. I certainly found that I was able to appreciate not only what I had been doing wrong at home but, more importantly, why it was wrong! Coming home with 6 loaves means that I haven’t had the need to bake any new bread since the Masterclass. However I have been able to apply my new techniques and have successfully produced a batch of Chelsea Buns for the 1st time. Great!

    Today I turned out 5 fantastic breads under the guidance of our super baker, Paul. We got off to a swift start and soon realised that kneading dough can vie with any arm exercise at my local gym! The pace of the lesson was perfect with Paul instructing us not only on method but also backed up with scientific facts in easy to understand terms. All ingredients were supplied and we had an excellent lunch (with wine if desired) and afternoon coffee break with one of Cinnamon Squares’ famous buns. This one day course is very sociable with a maximum of 8 like-minded people and I will certainly be using my discount voucher to book another. Pattiserie next…..

    I would just like to say how much I enjoyed the bread making course. I came away with some invaluable tips, a renewed enthusiasm for hand making my own bread and some stunning bread. I had
    the most glorious supper of a taste of the bread that represented each type of dough. My freezer is now bulging with bread but I am planning to share it around with my friends so that I can have a go at baking some more very soon. I will be back for the first sourdough course that I can fit into diary.

    Fabulous course, well paced and very informative. Came home with a variety of delicious loaves which I wouldn’t have had a problem paying for in a shop. I used to be an infrequent baker due to the poor results with rock hard bricks or pancakes. Cannot recommend this course highly enough!

    I started off making bread in a bread maker and then progressing to hand made when the bread maker broke but felt I needed more guidance with my quite heavy wholemeal loaves so booked onto this course. A fantastic informative day. Found out where I have been have going wrong and looking forward to putting what I have learned today into practice. Thank you Paul for a very enjoyable day. Will definitely think about doing one of your other courses ONCE I have finished all this delicious bread that I brought home.
